Rosemary-Garlic Lamb Roast Recipe
From the kitchen of Dr. Randall Hansen What follows is a very easy recipe for making delicious rosemary-garlic infused roast lamb. It takes about 2 hours to complete this recipe, with 15 minutes of prep time, 1 1/2 to 2 hours for roasting. IngredientsDirections1 (4-5) pound boneless lamb roast, netted 1 tablespoon -- about 4 decent stalks -- of fresh rosemary 4-5 teaspoons of Garlic Gold (or about 3-4 cloves of garlic, minced) Salt and pepper
- Preheat oven to 450 degrees.
- Prepare small roasting pan.
- Spread Garlic Gold (or garlic) over entire roast.
- Chop most of rosemary and spread over entire roast, with remaining stuck into netting at both ends.
- Place in oven for 15-20 minutes.
- Reduce oven temperature to 350 and continue roasting for 90 minutes (about 60 minutes if using confection oven).
- Place roast on platter, cover with foil, and let stand for about 10 minutes.
- If using a meat thermometer, keep roast in oven until 140 degrees for medium-rare and 155 degrees for medium done.
