Low-Carb Keto Pecan Pie Muffin Recipe

What follows is a very easy recipe for making delicious no-sugar, low-carb pecan pie muffins... perfect for the holidays. It takes about 15 minutes of prep time, and another 15-20 minutes for baking.

Makes 12 muffins

Ingredients
  • 1 cup butter
  • 2/3 cup Swerve (erythritol) brown sugar blend
  • 3 eggs
  • 2 cups chopped pecans
  • 2/3 cup almond flour (or other low-carb baking mix)
  • Directions
    1. Preheat oven to 350F. Place cupcake papers in 2 six-muffin or 1 12-muffin muffin tin
    2. Cream butter, eggs, and Swerve brown sugar.
    3. Mix in flour and pecans until well-blended
    4. Fill each muffin cup in muffin tins with batter
    5. Bake 15 to 20 minutes, until a wooden pick, inserted in middle, comes out clean. Cool in pan 10 to 15 minutes, then remove pan and put on rack. Serve warm

    Optional: To make these pecan pie mufflins even more sinful, consider whipping up some low-carb whipped cream (heavy cream and Splenda) to serve on top of each muffin!
